Catch Up on Cakes

sorry that I haven't posted in a while but here are a few cake i have made recently...
below are the chocolate filled, hot chocolate cupcakes I made for my boyfriend's birthday using recipies from the hummingbird bakery cookbook...

the second picture is the white chocolate and popping candy cupcakes i made for new years eve, these were a little trial and error as the moistire from the cake affects the popping candy

Chocolate Orange Cupcakes


Ganache is useful as a filling, a frosting, or a glaze. once refrigerated its the consistency of peanut butter, it can be whipped also. it should be noted that adjusting the amount of chocolate to cream will produce a firmer, or softer ganache. This is a simple recipe for chocolate orange cupcakes that goes with great with a chocolate orange ganache. If you think all cupcakes should come with buttercream then I have also included a recipe for a white chocolate and orange buttercream.

White Chocolate, Raspberry & Cream Cupcake

I have always had a love of baking but amongst university work and my job, baking has fallen through the cracks. So with university done and work mainly in the evenings, I've decided to dust of the cake tin and get back to baking.


So here is a simple recipe for white chocolate cupcakes, with a cream filling and raspberry icing... Tried, tested and approved by my work colleagues.
