Sugarpaste Bow

Creating sugarpaste bows is a great skill to have and once mastered, you can make them large or small and introduce your own tweaks that make it unique. I used them to top my summer cupcakes and glazed them with orange and lemon juice.




You Will Need:
200g flowerpaste
Edible Glue

  1. Divide the the sugarpaste in two and roll out one half into a long strip 2mm thick. Use a ruler to help you cut out two rectangles 15cm x 7cm.
  2. Brush one end of a strip with edible glue and fold the opposite end over to make a loop. Tuck a wad of kitchen towel inside the loop to help it hold its shape and pintch the ends together to make a pleated fold. Repeat with the other strip.
  3. Trim off the pinched ends so that the loops will sit flat against each other, then brush both ends with edible glue and stick them together to make a bow.
  4. To make the knot, roll out more sugarpaste and cut a 7cm x 5cm. Wrap it around the centre of the bow.
  5. Brush the back of the knot with edible glue to help it stick in place and place the bow to one side.
  6. Roll out the remaining sugarpaste thinly and cut two strips 10cm x 7cm to make the bow tails. Cut one end of both strips at 45° angle. Pinch the ends of each bow tail to look like gathered fabric.
  7. Brush the underside of the bow tails with edible glue and stick the pinched ends in the centre of the cake at a 90° angle to each other.
  8. Brush the underside of the bow loops with edible glue and position on top of the pinched ends of the tails. Gently press the knot down in the centre to help the bow sit nicely. Remove the paper towel from inside the loops if they feel firm enough.
  9. Carefully smooth the tails over the surface of the cake and fold them down over the edge.
